Costa del Sol closes after 6 years of service

Windsor recently said farewell to a popular Mexican restaurant that had served the community for the past six years.

Costa del Sol Mexican Restaurant & Cantina, located in Suite E at 11409 Windsor Blvd., closed its doors permanently on July 30.

Manuel Vasquez, owner of the business, notified the public about the closing of Costa del Sol Inc. via a letter he wrote and posted on the restaurant’s Facebook page on July 25.

“We have provided high-quality Mexican food for 6 years and been an enthusiastic part of the local community,” he stated.

He noted that the restaurant is closing because he is moving out of state.

“Thank you for making Costa del Sol one of the town’s most popular eating establishments,” he said.

He stated that John Westbrook would be performing live music at a farewell event on July 30, and Vasquez then told the valued customers he was addressing that they were welcome to attend at any time.

“Thank you for your loyal patronage over the years,” he said. “We wish you all the best for a happy and prosperous future.”

His social media post prompted several comments, including one from KayeKaye Naneville that reads, “We are very sad to see our favorite restaurant close. We have been with Costa del Sol since day one, and y’all are family to us. We love you!”

Alexis Goatley wrote, “Oh my goodness no!! Manuel where will I get the best margarita!!!”

Mary Jane Dodd Bland wrote, “We have so much enjoyed our food and friendship. We are sorry to see you go, and we wish you well. God has a plan.”

In an interview, Windsor Mayor George Stubbs said he was sorry to learn of Costa del Sol’s closing, noting that it was a popular and novel restaurant in the town.

“It was a change for our town, something new to have a restaurant of this type,” he said. “I always found the food to be good, servers to be friendly, a family atmosphere inside.

“I feel it is a loss to our town,” he said of the closing. “I would like to wish the owner the best and thank him for bringing his business to Windsor.”

The restaurant’s website, www.costadelsolwindsor.com, includes the story of the business, explaining that it began in May 2017 when entrepreneurs Manuel Vasquez and Carlos Vasquez opened the establishment in Windsor.

“The founders’ goal is simple,” the story states. “To open not just a restaurant serving delicious, authentic Mexican food every day, but a place where guests of all ages can come together to experience the unique flavors, along with the art and culture, of Mexico — all in a casual, comfortable setting.

“We love to talk about our made-from-scratch dishes, each one made from the heart and crafted with pride from Chef Carlos’s family recipes,” the story continues. “We use only the freshest, finest ingredients in all our dishes, from our scratch-made salsas, sauces and sides, to our hand-rolled enchiladas, traditional Mexican items and unique House Specialties.”

The story also alludes to the hospitable atmosphere the team at Costa del Sol established for its customers.

“On each visit, we’re happy to ‘welcome you into our home,’ and our passion ensures you have a great experience each and every time,” the story states.
