Mexican restaurant opens in Windsor

Costa Del Sol, a Mexican restaurant, opened in Windsor on Monday, May 1. The restaurant is located in a shopping center near the Food Lion located off of Route 460.

Owner Manuel Vasquez, who also owns the Plaza Azteca restaurant in downtown Suffolk, said he decided to open Costa Del Sol after receiving numerous requests from his customers at Plaza Azteca for Mexican food closer to Windsor.

“The customers ask me every time for Mexican food in this area,” he said. “Business has been excellent. We are happy to be here.”

Vasquez added that the only task that remains in getting the restaurant 100 percent completed is for him to obtain a liquor license for the place, after which he plans to have a grand opening celebration. Once obtained, Costa Del Sol will offer a full bar service with wines, beers and liquor, he said.

So far, Vasquez has hired seven employees and hopes to hire more. He divides his time between Costa Del Sol and Plaza Azteca, with 25 percent of his time at Costa Del Sol. But he plans to eventually get out of running Plaza Azteca and be at Costa Del Sol 100 percent of the time.

Vasquez, originally from New York, has had many years of experience running Mexican Restaurants. He relocated to Virginia more than two decades ago to help his parents open a Mexican restaurant in Norfolk called La Herradura, which now operates in both Norfolk and Virginia Beach. From there, he went to Plaza Azteca, where he has worked for the past 20 years.

No date has been scheduled yet for the opening of the bar area or a grand opening.
