A warm, flaky business

FRANKLIN—Jane Gibson recently opened a storefront and packing center at 305 N. Main St. in Franklin for her sweet potato biscuit business.
“I wanted to expand my line and I couldn’t do that at home,” said Gibson, who has operated Jane’s Sweet Potato Biscuits since 2005 from her home on Clay Street.
Gibson said the downtown location should help bring in more business.
In addition to the sweet potato biscuits already being sold at Simply Divine, the Peanut Patch and other local retailers, Gibson also makes cheese biscuits. Future varieties include chocolate, tomato basil and cinnamon pecan with a grand marnier glaze.
Jane’s Sweet Potato Biscuits, which has two part-time employees, is open 8 a.m. to 2 p.m. Monday, Tuesday, Wednesday and Friday.
A grand opening will be held 10 a.m. to 5 p.m. Saturday, Nov. 19. The event will be in conjunction with the Downtown Franklin Association Christmas Open House. Downtown businesses will offer specials 10 a.m. to 5 p.m. and free carriage rides from 2 to 4:30 p.m.
